Just a thought that may help diagnosis. If yout car is running at 70, and you're not sure if it's the gauge or stat, you can let the car warm up while stationary or with traffic, and if the needle goes up to 90, and the fans kick in at 92-95, then the gauge is ok, it's ust that the 'stat isn't fully closing, letting water flow through the rad before it's hot enough.
If you have a problem where the temp is ok normally, but gets very hot when you're using high revs, especially in a V6, you might have a water pump/plastic impellor problem.
