Replacing exhaust gaskets

Had a horrible time at the weekend replacing the head-to-manifold gaskets. First attempt lead to a lot of exhaust smoke in the engine bay Second attempt re-tightening nuts after loosening again seems to have done the trick (I hope). The nuts are quite small and easy to round-off, so I was reluctant to tighten them too much. Also, running the engine for about 20 seconds seemed to loosen the nut again, guess due to expansion.

Seeing as I still have the rear bank left to do, I have some questions:

1. What is the trick to do this successfully - is there a recommended tightening order for the nuts, middle first then outer maybe?
2. Should I let the engine heat up a bit and re-tighten (the nuts loosened a good bit after about 20sec running).
3. The nuts are made crappy soft metal (copper alloy?) and almost seem designed to round off. Can I replace these with steel nuts? (I have some spares that fit).
