Smoking when hot, no idea why.

Not the easiest thing to explain but i will do my best.
My car gives out WHITE/GREY smoke. Not blue or black. Just need to clear this up.
It uses about a litre of oil every 250 - 300 miles.
Here is the hard part.
From cold the car will do about 60 miles, town or motorway without any smoke what so ever.
Here is the harder part, i can feel on the accelorator getting harder and harder, and as long as i dont push the accelortor past the hard part, there is no smoke. However the hardness comes and goes, normally if im on a hill it gets hard and i can only do about 60mph before i see smoke. With this hardness on the accelorator i can still get up 80-85mph without any smoke, or any problems, as long as i drive how the car wants me to drive, ie not pushing her to hard when the accelorator feels hard.
If i push hard down when the accelorator is at the hard part, i will create a HUGE massive white thick cloud of smoke, this hangs around for 10 - 15 seconds, and is very dangerous as you can not see through the smoke. It stanks of oil. I will then get constant white smoke for a few seconds, this can sometime last up to a minute.
The car has just been serviced, and an induction kit added (this was added as it was easier then replacing the air filter housing) I am using 10-40 oil, but i have just bought 8 liters of 10-60, the oil cost £78 so dont just want to stick it in the car to burn off.
I have seen smaky post about the inlet stub manifold, but i cant see a way to take this off, any help on this would be great.
The water in the coolent system is clean, no signs of oil, the car never gets hot unless i am stood still for about 10 minutes. And by not hot, the in car reading needle looks like it never moves (it works as it rises when i am stood still for a few minutes)
There always seems to be a lot of water in the exhaust.
1 last thing, i was rev'ing the car outside just to see if there was any smoke. there isnt unless i get the revs over 5,000 RPM, and then i get white/grey smoke every now and again (nothing major), I rev'ed her up to 6,500 RPM for a second and got a nice blue smoke, this is the 1st and only time i have seen blue smoke from her, as i normally drive her at around 4,200 RPM.
Any ideas on wat to fix with these problems would be great.
Few other points i should add.
The car has done 73,000 miles... it did 62,000 of these in the 1st 2 years of its life, then the other 11,000 other 7 years. When i bought the car it hadnt been serviced in 2 years, but apperntly had the head gasket, timing belt, vaule stem changed, and some other things done to it, i can not comfirm this as there is not paper work for it, but the timing belt dose look nice and new.
Just found the Exhaust Emissions test results from january, and it passed all these, this was done at the time of the MOT. In jan it had 70,000 miles on the clock, so has only done 3,000 miles this year.
