It's up to you and your conscience whether you tell the insurance and technically, it will invalidate a warranty, if it's in for a big claim these warranty companies know how to wriggle out of claims, they employ teams of lawyers and professional wrigglers that know the tricks of the trade and will eventually find out if the claim warrants the investigation time.
My local indie knew I had a remap within a couple of minutes, took it out for a spin and noticed it was a lot quicker than standard, they plugged it in and read the date out of the ECU when it was mapped. They don't need a rolling road, one spin and they'll know it's got more power than standard within a couple of hundred yards.
Chances of it being found out by the dealer are very slim, but still possible.
As for where to go to get it done, have a search on the forum here, Angel, Red Dot, AHM, Alfa_Tuner, Celtic ... and others, they all have good reputations and plenty of happy customers on the board. If any one of them put out maps than blew turbos and caused gremlins, people would post it up here pretty quick.
