I think it would take alot longer than 2 yrs for the water content of brake/clutch fluid internally causing any damage, pipes themselves - well look what they are subjected to externally ?. Normal use the risk of boiling and bubbles affecting the operation of vital components is minimal, emergency stops maybe, but then you just hit then hard and pray in that situation anyway, spongy or not they'ed be on.
Track days then you have a point due to needing optimal performance when full out continual braking, but otherwise yes agree its OTT. Find a service manager off record who dis-agrees, 5 yrs seems more understandable.
GT service states every 3 yrs, regardless of age, unless I have an out of date CD
