A knacked thermostat stays stuck open, typically.. (some stay stuck closed, which is much more exciting!), so you have a permanently open circuit to the radiator and that makes the engine take ages to warm up and unable to retain the normal operating temperature.
But you could have a "lazy" thermostat.. one that stays partially open.. so the engine takes longer than normal to warm up but it can still reach operating temperature. The thermostat rarely completely closes when the engine is warm.. I think yours has started to stick in that "operating temp" degree of opening.
Run it for a bit longer (to see if it gets worse apart from anything else). If winter comes along and you notice that your motor is no longer warming up properly.. then it'll be time to stick a new one in there.
