The bite of the brakes will be down to the brake servo. I'm not saying that it's a fault, just that it'll be the 'tune' of the brake servo that Alfa have selected for the 3.2 which dictates how much initial bit you get.
If you stamp on the brakes I bet it stops very very quickly, so the discs and pads are fine. I found the same on my Fiat Coupe. The brakes were perfectly capable of stopping the car in a hurry, but I really really had to stand on the pedal sometimes. It's just becuase that car was under-servo'd
I should state, I've never driven the 3.2 GT, so I don't know if yours is any different to the rest.
