Gurgling behind the dash is coolant being fed through the pipes. There's air bubbles in there, so check the coolant level (when it's cold).
If it's too low, start the engine put the heat setting and the fan on max (to open the heater matrix to the coolant circuit) and fill up the header tank to the correct mark. Let it run a bit so that you get all the air out.
That should solve the gurgling.
I dunno why you mention the washer fluid. This isn't the same as coolant. I'm just checking you understand that.. it has it's own tank and it doesn't gurgle at all.
Seeky seems to have done a head gasket. All the water is gone and that smell would be the coolant that was left evaporating out, followed by oil burning as it overheated.
You won't necessarily get a "high temperature" reading as there's no water to work the sender.
Have the head pressure tested. If necessary (but doubtlessly) change the head gasket. You may need the head skimmed if it warped.
Replace coolant and oil with new stuff.
The gasket could have just "gone" though if you're booting it it would have brought on any failure sooner. Remember your engine is really quite a sensitive beast. If you haven't checked the oil and water recently then don't rev the **** out of it, until you do.
