Im thinking maybe the release bearing is actually moving along the input shaft in to the gearbox, the edge of the bearing housing has a habbit of rubbing on the pressure plate and causing wear on that. If the pressure plate was not changed during the clutch change for whatever reason and only the clutch plate changed, perhaps the release bearing has eventually broken through. That would to me, explain the very low biting point, the tick tick tick you are hearing where it is catching and possbily the bearing jamming and not seating correctly, catching on the pressure plate or as its trying to locate on the splines of the unput shaft.
Thats my randon 2 cents anyways. If its a garage, take it back and get then to fix it. Let us know whats happening.
