My car has me thinking about this also.
I changed the thermo 2 months ago and when I was fitting it I noticed that stamped on the unit was 86oC. I assumed that this was the MAXIMUM open temperature for the thermostat. Turns out that this is the MINIMUM open temperature, and max is ~100oC. This makes me wonder why my gauge reads ~75oC when on a run, and not 86oC. It rises to 85/90 when in traffic though. Could this mean that the new thermo is faulty?
What I am going to do is measure the temperature of the cooling fluid myself, just to verify that the sender or the dash is not out in some way.
