Seems you know this... The numbers work this way 195 = width of tire in mm. 60 = percentage (of mm) profile (width of sidewall) and 15 = inch diameter of rim (mag).
If you go from 55% to 60% profile and keep the width and mag the same, your rolling distance of the tire will be bigger (per revolution more distance). So you will go 7% faster for the same speedo reading than before. Usually speedos read 3% over so overall speedo will read 4% under real speed (50 on speedo = 52 real speed)
You can do it, but should recalibrate your speedo or just be a bit more careful of speed traps.
