Have done the oil cooler route on my V6 and its a hell of a job - if you think changing the V6 filter is bad then this is worse.

I would look at increasing the coolant flow with an additional pump as mentioned above and see if that improves things. For sure the oil / water cooler will be adding heat into the coolant but you should be able to remove this with improved coolant flow.

The oil cooler will also add extra weight to the front - not a great deal but a few kgs as you really need to move the oil filter location too.
