I run my V6 all day with temps from 35-45degC and it never overheats - the reason........the AC fan runs all the time so its pulling air through the coolant rad all the time too.
If you run a lower temp stat and have some external control (ie manual switch) on the fans it would be easy to keep the temp down - ok it would be fairly noisy with those fans running but you wont have a problem with overheating.
However removing the AC would give better airflow and a weight saving. Cant remember how the belt layout for the AC is though or if there is a version without AC
