For height I'd say get it looking like there is an equal space all around the wheel and arches, let it settle down for a few miles, then see how low you can go until speed humps and whatnot are an issue. When adjusting height I measure off the thread on the damper and make it equal on the opposite side. For damping, stiff as possible until comfort is compromised, play about, should find a good everyday setting in no time.
